Be able to understand the role and sources of nutrients required for a balanced diet to maintain good health.

1.1

Explain the function of protein, fat/lipids, carbohydrates, roughage/fibre, water, vitamins and minerals in the diet and identify examples of common food sources.

1.2

Describe how nutrients may be effected by:-

• the cooking process

• refining food

• environmental pollutants

Explain what constitutes a balanced diet, the importance and benefits of eating regularly, how nutritional imbalance can affect common health conditions and the factors that should be considered when planning dietary requirements for different people.

Explain metabolism, Basal Metabolic Rate (BMR) and units of energy.

Identify the basic rules/guidelines to food labelling.

Be able to understand how general information on healthy eating can complement the therapeutic quality of the treatment
