This unit is designed to assess the skills of learners in the workplace, monitoring and controlling throughput to achieve targets in food operations. It needs to be assessed on the job. The learner must be able to demonstrate their competent performance consistently over a period of time, to meet all of the assessment criteria. This will be achieved by at least two observations of performance in the workplace, and may be supported by witness testimony and other workplace evidence. Observations must ensure that the learner’s working practice is at commercial speed and in compliance with standard operating procedures.

Monitor and control throughput to achieve targets
Organise work to meet predetermined schedules, targets and make effective use of resources
Record the volume of throughput in line with operational requirements
Record production run output targets within the agreed operational parameters
Investigate output targets within the operational parameters.
Take action to resolve problems affecting volume of throughput
Identify problems affecting the volume of throughput
Take corrective action to rectify and minimise the effects of the problems
Report problems, which exceed the limits of own authority, to the relevant people
Resolve problems that fall within own limits of responsibility.
